Party Lettuce Boats with European Pork

INGREDIENTS

Base:

  • 900 g European pork tenderloin (or loin)
  • 1-2 heads of butter lettuce (or baby gem lettuce) – for wrapping
  • toasted sesame seeds (for garnish)
  • optional: chopped chives

Hoisin-Chili Sauce:

  • ½ cup hoisin sauce
  • 3 tbsp soy sauce (preferably low-sodium)
  • 2 tbsp rice vinegar
  • 2 tsp sriracha sauce (or other hot chili paste)
  • 1 tsp finely chopped fresh ginger
  • 4 cloves garlic (minced)

PREPARING

  1. The Sauce: In a small bowl or jar, thoroughly mix all the sauce ingredients: hoisin, soy sauce, rice vinegar, sriracha, ginger, and garlic. Set aside.
  2. The Meat: Preheat your grill (or grill pan) to approx. 200°C. Lightly grease the grate. Wash and dry the pork, then cut it into thick medallions (about 2-3 cm thick).
  3. Grilling: Place the meat on the grate. Grill for 4–6 minutes on each side until the meat is fully cooked but still juicy inside.
  4. Remove the meat from the heat and let it “rest” on a cutting board for 3 minutes to allow the juices to redistribute evenly.
  5. Heating the Sauce: Meanwhile, pour the prepared sauce into a small saucepan. Heat over low heat for 2-3 minutes until warm and slightly thickened (this helps it coat the meat better).
  6. Combining: Cut the meat into small cubes or strips (bite-sized pieces). Place in a large bowl, pour over the warm sauce, and toss until every piece is thoroughly glazed.
  7. Serving: Arrange washed and dried lettuce leaves on a large platter. Place a portion of the glazed meat into each leaf. Sprinkle with toasted sesame seeds (and chives, if using).
