European Beef Bowl

Number of servings: 2
Preparation time: 35 minutes

INGREDIENTS

  • 200 g beef sirloin
  • 100 g pork belly
  • 50 g red onion
  • 100 g cooked corn on the cob
  • 250 g cucumber
  • 50 g kimchi
  • 50 g cherry tomatoes
  • 50 g mixed greens
  • 20 g chives
  • 50 g mayonnaise
  • Sriracha sauce
  • 30 g cooked rice
  • 50 g edamame beans

PREPARING

  • Cook Beef & Onion: Slice the beef sirloin thinly. Toss with soy sauce, dust lightly with potato starch, and fry in a hot pan until seared. Towards the end, add the red onion and sauté briefly together.
  • Crisp Pork Belly: Slice the pork belly thinly and fry until crispy.
  • Prep Veggies: Slice the cucumber, corn, and cherry tomatoes. You can leave the kimchi whole or chop it slightly. Leave edamame and mixed greens as they are.
  • Make Sriracha Mayo: In a small bowl, mix mayonnaise with Sriracha sauce. Add toasted sesame seeds (optional) for a creamy, slightly spicy dressing.
  • Assemble the Bowl: In a large bowl or lunchbox, layer the cooked rice. Add the mixed greens, prepped vegetables (cucumber, corn, tomatoes), edamame, kimchi, fried beef, and crispy pork belly.
  • Garnish & Serve: Drizzle the mayonnaise sauce over everything and sprinkle with freshly chopped chives.
