Matcha sponge cake with apples

INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup plant-based milk
  • 1 tablespoon matcha powder
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup brown sugar

For the topping:

  • 4 tablespoons coconut cream
  • 2 teaspoons maple syrup / agave syrup
  • 1/2 teaspoon matcha powder
  • 2 apples
  • Chocolate flakes

PREPARING

  1. Preheat the oven to 180°C.
  2. In a large bowl, add the flour, matcha powder, baking powder, and brown sugar. Mix well, then add the vanilla extract and plant-based milk. Stir until a loose batter forms.
  3. Pour the batter into a buttered baking pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool.
  4. In a small bowl, mix the coconut cream, maple syrup, and matcha powder. Stir well and refrigerate while the cake cools.
  5. Once the cake has completely cooled, spread the topping over it, arrange the sliced apples, and sprinkle with chocolate flakes.
