European Beef Rolls with Enoki Mushrooms

INGREDIENTS

  • 400 g European beef round (thinly sliced)
  • 80 g enoki mushrooms
  • 1 large onion
  • 2 eggs
  • 200 g rice (for serving)
  • 6 tbsp olive oil
  • 50 g chives
  • black sesame and chilli powder (for decoration)

Sauce:

  • 80 ml soy sauce
  • a splash of dashi stock (or water)
  • 1 tbsp mirin
  • 1 tsp sugar
  • pinch of black pepper

PREPARING

  1. Divide the enoki mushrooms into smaller bunches. Wrap each bunch tightly with one slice of beef, forming rolls.
  2. In a small bowl, mix the sauce ingredients: soy sauce, dashi stock, mirin, sugar, and pepper.
  3. Heat the olive oil in a pan. Add the onion cut into thin slices and sauté for 3-5 minutes until translucent and lightly caramelised.
  4. Place the prepared rolls (seam-side down) on the sautéed onion. Pour the entire prepared sauce over the top.
  5. Cover the pan and simmer for 3 minutes. Then uncover, flip the rolls to the other side, and fry for another 1-2 minutes.
  6. Beat the eggs in a bowl and pour them evenly over the rolls and onion. Simmer over low heat, covered, for about 2 minutes until the eggs set.
  7. Sprinkle the finished dish with chopped chives, black sesame, and a touch of chilli. Serve with cooked rice.
