Apple muffins with caramel sauce

INGREDIENTS

  • 2 large apples
  • 100 g all-purpose flour
  • 100 g sugar
  • 75 g melted butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 0.5 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 50 ml milk
  • 50 g brown sugar
  • 25 ml heavy cream
  • Pinch of salt

PREPARING

  1. Preheat the oven to 180°C.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon and salt.
  3. In a separate bowl, beat the eggs, then add the melted butter, vanilla extract and milk. Mix until well combined.
  4. Add the wet ingredients to the dry ingredients and gently mix until the batter is smooth.
  5. Fold in the diced apples gently.
  6. Spoon the batter into muffin liners placed in a muffin tin.
  7. Bake in the preheated oven for 20-25 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Meanwhile, in a saucepan, heat the brown sugar, heavy cream, and 50 g of butter, stirring until the sugar dissolves and the mixture is smooth. Simmer on low heat for 5-7 minutes, until the sauce thickens.
  9. Garnish the muffins with apple slices and drizzle with the caramel sauce.
