Udon noodles with beef and vegetables

INGREDIENTS

  • 200 g beef (tenderloin or roast beef)
  • 200 g udon noodles
  • 1 carrot
  • 0.5 red bell pepper
  • 1 small zucchini
  • 50 g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon ginger
  • Salt and pepper to taste
  • Chives for garnish

PREPARING

1.   Slice the beef into thin strips.

2.   Season with salt, pepper and a bit of sesame oil.

3.   Cook the udon noodles according to the package instructions. Drain and set aside.

4.   Cut the carrot, bell pepper, zucchini, mushrooms and onion into thin strips. Finely chop the garlic and ginger.

5.   Heat a wok with a bit of sesame oil.

6.   Add the beef and stir-fry for 3-4 minutes until the meat is browned.

7.   Add the vegetables and stir-fry for another 4-5 minutes until they soften.

8.   Add the cooked udon noodles. Pour in the soy sauce and honey, and mix everything well.9.   Transfer the dish to a lunchbox and garnish with chopped chives.
