Tonkatsu Skewers with Miso Dressing Salad

INGREDIENTS

Skewers:

  • Tonkatsu sauce
  • 100 g pork
  • Mushrooms (about 5 pieces)
  • 4 small red onions
  • 1 slice of fresh pineapple
  • Cilantro

Salad:

  • 300 g apples
  • 2 radishes
  • 1 cucumber
  • 1 small red onion
  • Dill

Dressing:

  • 1 tsp light shiro miso paste
  • 1 tbsp mayonnaise
  • 1 tbsp yogurt
  • 1 garlic clove (crushed)
  • 1/2 tsp mustard
  • 1/2 tsp lemon juice
  • Sea salt and black pepper

PREPARING

Skewers:

  1. Cut the pork into large cubes and mix in a bowl with a few teaspoons of tonkatsu sauce.
  2. Cut the mushrooms in half, and do the same with the onions (if they are larger, separate them into layers).
  3. Peel the pineapple and cut each slice into 8 triangles.
  4. Thread the vegetables and pork alternately onto skewers, then place them on a hot pan.
  5. After a few minutes, remove from heat and garnish with fresh cilantro.

Salad:

  1. Cut the apples into thin strips.
  2. Slice the cucumber, radishes, and red onion into rounds.
  3. Mix all dressing ingredients thoroughly and drizzle over the vegetables

TIP: You can add an extra drizzle of tonkatsu sauce over the skewers for more flavor!
