INGREDIENTS
- 200 g beef tenderloin
- 200 g sushi rice
- 50 g apple jam
- 50 ml unagi sauce
- 15 g Dijon mustard
- 1 tbsp mayonnaise
- 100 ml sushi vinegar
- Nori sheets for sushi
- Avocado
- Cucumber
- Mango
- Pickled ginger
- Wasabi
Cook the rice according to the package instructions. Set aside to cool.
Slice the cucumber, peel the avocado and mango. Cut the beef into thin slices.
Prepare the sauce: in a bowl, mix the apple jam, 40ml unagi sauce, 1 tbsp mustard, and mayonnaise.
Transfer the rice to a bowl. Add the vinegar mixture, mix, and set aside.
Chop the beef, add 1 tsp mustard, 10ml unagi sauce, 1 tsp soy sauce, and a pinch of salt and pepper. Chop again, mixing the ingredients together.
Spread the rice on a sheet of nori, pressing firmly. Add the beef, cucumber, and avocado. Roll using a sushi mat, creating a roll. Place beef slices on top and sear with a blowtorch. Brush with a little unagi sauce and slice.
Arrange the sushi in a box, drizzle with apple sauce on top. Add chopped mango, radish sprouts, chopped chives, wasabi, and pickled ginger.
