Quick Pork Stir-Fry with Bell Peppers and Rice Noodles

INGREDIENTS

  • 200 g minced pork
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 100 g broccoli
  • 2 garlic cloves, finely chopped
  • 200 g rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 finely chopped leek (for garnish)
  • Sesame seeds for decoration

PREPARING

  1. Heat sesame oil in a pan. Add chopped garlic and fry for a few seconds until fragrant.
  2. Add minced pork and cook until browned. Season with soy sauce and oyster sauce, then mix well.
  3. Add the bell peppers and broccoli, and stir-fry for another 2–3 minutes until the vegetables are slightly softened but still crunchy.
  4. Add the cooked rice noodles (prepared according to the package instructions) and mix everything thoroughly to combine.
  5. Transfer the stir-fry to a lunchbox and garnish with chopped leek and sesame seeds.
