Crispy tacos with pork and vegetables

INGREDIENTS

  • Several taco shells
  • 400–500 g pork
  • 1 red bell pepper
  • Salt and pepper to taste
  • Sweet and hot paprika to taste
  • 2 garlic cloves
  • 2 tbsp oil

For the sauce:

  • 1 can of tomatoes
  • 1/2 can of red beans
  • 1/2 can of corn
  • Salt, pepper, and sugar to taste
  • 3 garlic cloves
  • Chili powder to taste

Additional ingredients:

  • Napa cabbage
  • Fresh coriander
  • Red onion

PREPARING

  1. Cut the pork into small cubes, season with spices, and mix well.
  2. Finely chop the bell pepper. Heat oil in a pan and sauté the pork with the bell pepper and minced garlic. Stir until the meat is cooked through and any liquids have evaporated.
  3. Combine the sauce ingredients in a pot, season to taste, and cook until the sauce thickens. Add chili powder if you prefer it spicy.
  4. Spread a layer of sauce on each taco shell, add a portion of the cooked pork, and top with chopped napa cabbage and red onion.
  5. Garnish with fresh coriander and serve.
