Buttermilk pancakes with caramelized apples

INGREDIENTS

For the pancakes:

  • 1 cup of light spelt flour or all-purpose flour
  • ½ teaspoon of baking powder
  • 1 cup of buttermilk
  • 1 egg
  • 3 tablespoons of sugar
  • 1 teaspoon of oil for frying

For the caramelized apples:

  • 2 apples (e.g., Ligol, Jonaprince, or Gala)
  • 2 tablespoons of sugar
  • 1 tablespoon of butter
  • A few fresh mint leaves (optional)

PREPARING

  1. Peel the apples and dice them into small cubes.
  2. In a pan, melt the butter with the sugar, stirring until it forms a golden caramel. Add the apples and sauté for 5-7 minutes until softened and coated in the glaze. Add a few mint leaves for aroma during cooking. Set aside.
  3. In a bowl, mix the flour with the baking powder. Add the buttermilk, egg, and sugar, then whisk thoroughly until the batter is smooth. Let it rest for 5 minutes.
  4. Heat the oil in a pan and spoon portions of the batter to form small pancakes. Fry on low heat for about 2-3 minutes on each side until golden. Drain the pancakes on a paper towel.
  5. Serve the pancakes topped with caramelized apples. Garnish with additional mint leaves if desired.
