Fluffy Apple Pie-Inspired Omelets

INGREDIENTS

  • 2 whole eggs + 1 egg white
  • 200 g flour
  • 15 g shredded coconut or coconut flour
  • 2 tbsp honey
  • 1 tbsp sugar
  • 2 tbsp plain yogurt + 1 tbsp for serving
  • 1/3 tsp baking powder or baking soda
  • Optional: a few drops of vanilla extract
  • 1 European apple
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1 tsp erythritol (optional)
  • Clarified butter for frying (optional)

PREPARING

  1. Prepare the Batter: Beat the egg whites until stiff peaks form. Then, add the yolks, 1 heaping tbsp of beaten egg white (you can use a vanilla-flavored vegan alternative), flour, erythritol, 2 tbsp yogurt, baking powder or soda, and vanilla extract. If using shredded coconut, blend it into a fine powder before adding. Gently mix everything together.
  2. Bake or Fry: Pour the batter into a mold and bake in a preheated oven at 180°C for about 20 minutes. If you prefer, you can fry the omelets in a pan using 1 tsp of clarified butter.
  3. Prepare the Apples: In a small pot, heat 1 tbsp sugar until it starts to melt. Meanwhile, dice the apple and add it to the pot. Pour in 2 tbsp water, add cinnamon, cardamom, and erythritol. Cover and simmer on low heat, stirring occasionally, until the apples soften (about 5-10 minutes).
  4. Serving: Serve the omelets with stewed apples and a spoonful of plain yogurt. Enjoy!
