Explore the technology keeping European apples fresh.

European apples reach the tables of consumers all around the world – but first, they must travel thousands of kilometers! How is it possible that, despite the long transport, they still taste as if they were just picked from the orchard?

The answer lies in the advanced technologies used by European producers!

Controlled atmosphere – the key to freshness

Storing apples in a controlled atmosphere (CA) involves lowering oxygen levels and increasing carbon dioxide, which slows down the fruit’s ripening process. This allows apples to stay fresh for several months!

The CA technology slows the respiration of the fruit, helping them maintain firmness and flavor for longer. Studies have shown that ‘Gala’ apples stored in these conditions retain their unique qualities even after long transportation, making them an excellent choice for shipment to distant Asian markets1.

Modern refrigeration – temperature matters

The second key element in preserving the freshness of apples is refrigeration technology. Apples are stored in special refrigerated containers where the temperature is maintained around 0–1°C, slowing the ripening process and preventing decay. Additionally, the air humidity is kept at an optimal level to prevent the fruit from losing moisture, ensuring they stay juicy!

These refrigerated containers are often equipped with systems that monitor oxygen and carbon dioxide levels (controlled atmosphere (CA)), further extending the apples’ shelf life, even after long  transport2.

Natural protective coatings – biotechnology in action

Biotechnology plays an increasingly important role in extending the shelf life of apples. European producers use natural protective coatings that form a thin layer on the fruit’s skin, shielding it from water loss and external factors. These coatings are made from edible materials, such as beeswax, carnauba wax, or plant-based cellulose.

How does it work? The coatings create a barrier to water vapor, reducing moisture loss during storage and transport. Additionally, these coatings are biodegradable and completely safe for consumers. This natural solution is becoming more popular, as it helps maintain the firmness and juiciness of apples for a long time without the need for chemical preservatives3.

Which apples travel the most and why?

Not all apple varieties are suited for long journeys. Here are the ones that handle long-distance transport the best:

  • Royal Gala – popular for its firm yet delicate skin, which provides excellent protection during transport. These apples are durable and resistant to mechanical damage.
  • Jonaprince – known for its juiciness and firmness. Its thick skin makes these apples ideal for long storage and transport without losing quality.
  • Ligol – a variety with exceptional durability and resistance to bruising, making it perfect for export. It retains its juiciness and flavor even after a long journey.

European technologies – the key to success

Advanced storage and transportation technologies, such as controlled atmosphere (CA), refrigeration systems, and biotechnology, are crucial for maintaining the freshness of apples in the global market. Thanks to these innovations, the fruit can endure long journeys while remaining fresh and flavorful. These innovations ensure the high quality of European apples, which you can then use in a variety of delicious recipes!
