Honey-Soy Pork and Broccoli Stir-Fry

INGREDIENTS

For the Pork & Veggies:

  • 1 lb (450 g) European pork tenderloin, thinly sliced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp sweet paprika (for colour and flavour)
  • 1 large head of broccoli, cut into florets
  • 1/2 red bell pepper, sliced (optional, for crunch and colour)
  • 1 tbsp cooking oil
  • 1 tsp cornstarch (or potato starch) mixed with 2 tbsp water, for thickening

For the Honey-Soy Sauce:

  • 1/2 cup (120 ml) soy sauce
  • 1/4 cup (85 g) honey
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame seeds (for garnish)

PREPARING

  1. Prep the Pork: Pat the pork tenderloin slices dry and place them in a bowl. Season with salt, pepper, and sweet paprika. Toss to coat evenly.
  2. Mix the Sauce: In a small bowl, whisk together all sauce ingredients: soy sauce, honey, minced garlic, and grated ginger.
  3. Blanch the Broccoli: Bring a small pot of water to a boil. Add the broccoli florets and cook for 1-2 minutes until they are bright green and tender-crisp. Drain immediately and set aside.
  4. Cook the Pork: Heat the oil in a large skillet or wok over medium-high heat. Add the seasoned pork in a single layer and cook for 2-3 minutes per side, until lightly browned.
  5. Combine and Thicken: Pour the sauce over the pork and stir everything together. Bring to a simmer. Stir in the cornstarch slurry and cook for another minute until the sauce thickens and bubbles.
  6. Final Toss: Add the blanched broccoli and sliced red bell pepper to the skillet. Toss everything together for one more minute to heat through.
  7. Serve: Serve immediately with steamed rice. This dish is perfect for meal prep – just pack it in a lunchbox next to the rice and garnish with a sprinkle of sesame seeds!
