Umami-Style Beef Salad with Yogurt Dressing

INGREDIENTS

For the Salad:

  • 100 g grilled beef (sliced thinly)
  • 2 tablespoons grated Parmesan cheese
  • 3 sun-dried tomatoes (sliced into strips)
  • 1 handful of fresh spinach
  • 50 g cherry tomatoes
  • 1/2 avocado
  • A few slices of red onion
  • A few slices of red bell pepper
  • Salt and pepper to taste

For the Dressing:

  • 3–4 tablespoons plain yogurt
  • 1 garlic clove
  • 1 teaspoon finely chopped red onion
  • 1 tablespoon chopped chives

PREPARING

  1. In a small bowl, mix 3–4 tablespoons of plain yogurt, a finely chopped garlic clove, 1 teaspoon of chopped red onion, and 1 tablespoon of chives. Season with salt and pepper and set aside.
  2. Season the beef with salt on both sides, heat a grill pan, and fry for 2–3 minutes on each side. Set aside for a few minutes, then slice thinly.
  3. Cut the cherry tomatoes in half, the sun-dried tomatoes into strips, and the avocado into slices (sprinkle with lemon juice). Slice the onion and bell pepper into thin slices.
  4. Place spinach leaves at the bottom of a lunchbox.
  5. Add the cherry tomatoes, grilled beef, sun-dried tomatoes, and avocado.
  6. Place the onion and bell pepper slices on top.
  7. Season with salt and pepper, sprinkle with grated Parmesan.
  8. Serve the dressing on the side or drizzle it over the salad.
