Tamagoyaki omelette with banana, peanut butter, and applesauce

INGREDIENTS

  • 2 apples  
  • 2 bananas  
  • 2 nectarines  
  • 50g blueberries  
  • 4 tbsp peanut butter  
  • 50 ml apple juice  
  • ½ tsp cinnamon  
  • 4 eggs  
  • 1 tsp sesame oil  
  • Oil for frying  
  • 1 tsp sugar  
  • A pinch of salt

PREPARING

  1. Prepare the egg mixture: crack the eggs into a bowl and add sesame oil, sugar, and a pinch of salt. Mix gently with chopsticks, ensuring no air is introduced into the egg mixture.
  2. Heat a pan and spread a little oil.
  3. Pour half of the egg mixture into the pan and spread it evenly. After about 1-2 minutes, flip it to the other side. Once the omelette is set, transfer it to a plate. Repeat with the remaining egg mixture.
  4. Spread peanut butter on one side of the omelettes, place a peeled banana on each, and roll them up.
  5. Place the rolls back on the pan and lightly fry, pressing them with a wooden spatula.
  6. Prepare the apple sauce: wash and peel the apples, remove the cores, and blend them with apple juice.
  7. Cut each roll into 8 equal pieces and transfer them to a lunchbox.
  8. Finally, drizzle with applesauce, sprinkle with a bit of cinnamon, and add sliced strawberries.
