Pork yakitori with rice and vegetables

INGREDIENTS

  • 300 g pork tenderloin
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 2 garlic cloves, finely chopped
  • 1 tbsp grated ginger
  • Skewers
  • 200 g rice
  • 1 tbsp black sesame seeds
  • Vegetable mix: bell pepper, zucchini, bamboo shoots, wood ear mushrooms, corn
  • Chives
  • Cooking oil

PREPARING

  1. Cut the pork tenderloin into small pieces.
  2. In a bowl, mix soy sauce, mirin, sugar, garlic, and ginger. Add the pork pieces, mix well, and marinate for 15-30 minutes.
  3. Thread the pork pieces and sliced zucchini onto skewers.
  4. Grill the skewers over medium heat with a tablespoon of oil for about 10 minutes, turning every few minutes.
  5. Meanwhile, cook the rice according to package instructions.
  6. Sauté the vegetables in a pan with a tablespoon of oil.
  7. Slice the cucumber into thin strips and cut the carrot into flower and star shapes.
  8. In a lunchbox, place the cooked rice and sprinkle it with sesame seeds. Add the yakitori skewers next to the rice. Include the vegetables.
  9. Garnish the dish with chopped chives.
