Pork neck with apple and a veggie-rich couscous

INGREDIENTS

  • 150 g pork neck
  • 1 apple
  • 1 cup of couscous
  • 50 g broccoli
  • 50 g mushrooms
  • 0.5 red and green pepper
  • 0.5 cooked corn cob
  • 1 onion
  • 2 garlic cloves
  • Chives
  • 1 teaspoon sweet paprika
  • olive oil
  • 1 tablespoon barbecue sauce
  • 1 tablespoon ketchup
  • salt and pepper

PREPARING

Pour couscous into a bowl, add olive oil, salt, pepper, sweet paprika and cover with boiling water up to the couscous level. Set aside to swell.

Rub the pork with pepper and olive oil. Fry on a heated pan for 3 minutes on each side. After frying, cut into strips.

Cut the apple and vegetables into smaller pieces. Fry on a heated pan with a tablespoon of olive oil and season with salt.

Transfer to a box half of the cut apple, couscous, vegetables and fried pork neck. Sprinkle with chives on top.
