Poke Bowl with European Pork and Crispy Apple

INGREDIENTS

  • 150 g pork (e.g., shoulder or ham)
  • 1 tbsp teriyaki sauce (for marinating meat)
  • 100 g white or brown rice
  • 100 g edamame (frozen or fresh)
  • 1 carrot
  • 1 radish
  • ½ cucumber
  • ½ red bell pepper
  • 1 small apple
  • Handful of mixed greens or spinach/chard
  • 1 tsp sesame seeds
  • Nori flakes, furikake, or crushed peanuts (optional, for sprinkling)
  • Cooking oil

PREPARING

  1. Start with the Rice: Cook rice according to package directions. Meanwhile, cook or heat edamame (also per package directions).
  2. Prepare the Meat: Slice pork into thin strips or small pieces. Marinate in 1 tbsp teriyaki sauce for a few minutes. Then, pan-fry over medium heat until lightly browned and juicy.
  3. Prepare Veggies & Apple: Slice carrot, radish, bell pepper, and cucumber into thin strips or slices. Also, slice the apple or cut it into fun shapes (e.g., with a cookie cutter) – it will be impressive and crunchy!
  4. Prepare the Base: In bowls, lay down a handful of mixed greens, arugula, or young spinach. Add a portion of cooked rice.
  5. Sautéed Veggies (Optional): If you like, you can lightly sauté some of the vegetables (e.g., bell pepper, carrot) in a little oil. Towards the end, add a touch of teriyaki sauce for flavor and shine.
  6. Assemble the Poke Bowl: Arrange cooked pork, raw and/or sautéed vegetables, apple, and edamame over the greens and rice.
  7. Garnish: Sprinkle everything with sesame seeds and – if you have them – nori flakes, furikake, or chopped peanuts.
