French Mini Tarts with European Apples

INGREDIENTS

  • 1 package of puff pastry
  • 2 European apples
  • ¼ cup apricot jam
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 egg yolk
  • icing sugar (for decoration)

PREPARING

  1. Preheat the oven to $185^\circ\text{C}$. In a small bowl, mix the brown sugar with the cinnamon.
  2. Unroll the puff pastry and cut it into 6 equal rectangles.
  3. Spread one tablespoon of apricot jam in the centre of each piece, leaving the edges clean, then sprinkle with a little of the sugar and cinnamon mixture.
  4. Slice the apples thinly (no need to peel them) and arrange them decoratively on the jam. Sprinkle the top of the apples again with the remaining cinnamon sugar.
  5. Brush the clean edges of the pastry with the beaten egg yolk.
  6. Bake for 15–20 minutes, until the pastry rises and turns golden.
  7. After baking, wait a moment for the tarts to cool slightly, and dust them with icing sugar before serving.
