INGREDIENTS
- 100 g beef
- 2 whole wheat tortillas
- 0.5 red bell pepper
- 0.5 zucchini
- 1 carrot
- 1 red onion
- 2 cloves garlic
- 1 avocado
- 50 g iceberg lettuce
- 2 tbsp olive oil
- 2 tbsp natural yogurt
- 1 tsp Dijon mustard
- Salt and pepper to taste
1. Cut the bell pepper, zucchini, carrot, and onion into thin strips. Finely chop the garlic. Tear the iceberg lettuce into smaller pieces. Slice the avocado.
2. Slice the beef into thin strips.
3. Heat a pan with 1 tablespoon of olive oil, add the garlic, and sauté for 1 minute.
4. Add the beef and cook for 3-4 minutes until browned. Season with salt and pepper.
5. In the same pan, add the remaining olive oil, bell pepper, zucchini, carrot, and onion. Cook for 4-5 minutes until the vegetables are tender but still crisp. Season with salt and pepper.
6. In a small bowl, mix the natural yogurt with Dijon mustard, and season with salt and pepper.
7. On each tortilla, evenly spread the lettuce, avocado slices, cooked beef, and vegetables.
8. Add the yogurt-mustard sauce.9. Fold the sides of the tortillas toward the center, then roll them up. Wrap in paper.
