In Japanese culture, this period encourages reflection and the search for harmony, which is also reflected in the way meals are prepared. Cuisine during this time becomes light, based on delicate flavours and high-quality ingredients that support the body’s natural rhythm.

European pork, thanks to rigorous production standards and attention to consistent quality, fits perfectly into this philosophy. Below are three culinary suggestions that combine European products with the Japanese approach to balance!

Warm Wraps in Lettuce Leaves with Soy or Hoisin Sauce 

This suggestion is based on the contrast of temperatures and textures. The base of the dish is minced or finely chopped pork, briefly sautéed in a small amount of fat. The meat is seasoned with classic Asian sauces—soy sauce to enhance the salty flavour or hoisin for a deeper, sweetish note. The hot filling is placed on chilled, crispy lettuce leaves (e.g., Romaine or Iceberg), which serve as a natural wrap. The dish is light and allows the quality of the meat to truly shine.

Pork in Soy-Ginger Glaze over Rice

 A classic donburi-style dish (rice bowl with toppings) that focuses on the aroma of fresh ginger. European pork, sliced very thin (shabu-shabu style), is briefly cooked in a thick sauce based on soy and grated ginger. The glaze gives the meat a glossy appearance and intense flavour without dominating its natural texture. It is served over fluffy white rice and sprinkled with sesame seeds, which introduce a delicate, nutty accent.

Crispy Pork Strips with Pickled Radish 

In this version, the texture of the meat plays the key role. Pork strips (e.g., from the loin or ham) are fried in a very hot pan until a golden, crispy crust is achieved. The meat is served alongside Japanese pickled radish (takuan), which, thanks to its acidity, perfectly balances the flavour of the fried meat. Wrapped in fresh lettuce leaves, it creates a delicious meal—we highly recommend trying it!
