INGREDIENTS
For the Apple Pork Roulades:
- 300 g thinly sliced European pork loin (approx. 8-10 slices)
- ½ medium, firm apple
- A handful of fresh baby spinach
- 1 tbsp soy sauce
- 1 tsp mirin (or honey)
- 4 tbsp panko breadcrumbs
- 2 tbsp all-purpose flour (for dredging)
- 1 egg (for breading)
- Oil for frying (or olive oil spray for baking)
For the Apple-Soy Sauce:
- 60 ml good-quality apple juice
- 1 tbsp soy sauce
- 1 tsp honey
- ½ tsp rice vinegar
For the Bento Box:
- 120 g cooked rice (Jasmine or sushi rice)
- A piece of fresh cucumber
- 2 thin slices of watermelon radish (optional)
- ¼ apple
- A few drops of lemon juice
- 1 tsp furikake or toasted sesame seeds
- Optional for colouring rice: 1 tsp beetroot juice
- For decoration: silicone cups or dividers
