Teriyaki Beef with Crispy Rice and a Sesame Twist

INGREDIENTS

  • 200–250 g thin-sliced European beef (sirloin or tenderloin)
  • 1 cup cooked jasmine rice
  • 1 tsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp mirin or honey
  • 1 tsp sugar
  • 1 clove garlic (grated)
  • 1 tsp grated ginger
  • 1 tsp cornstarch or potato starch mixed with 2 tbsp water
  • Vegetable oil for frying
  • For garnish: Cucumber or edamame, chives, toasted sesame seeds

PREPARING

  1. Heat the sesame oil in a pan, add the cooked rice, and fry for 3–4 minutes without stirring until a golden, crispy crust forms on the bottom. After this, stir the rice and remove it from the pan.
  2. On a very hot pan with a bit of vegetable oil, briefly sear the beef slices—30–40 seconds per side is enough to brown the meat—then remove it from the heat.
  3. In the same pan, add the grated garlic and ginger and heat for a few seconds until they release their aroma.
  4. Pour in the soy sauce, mirin (or honey), and sugar; once the liquid starts to boil, add the starch mixed with water.
  5. Stir the sauce vigorously until it thickens and becomes glossy.
  6. Place the fried beef back into the pan, thoroughly coat each piece in the hot sauce, and immediately remove from the heat.
  7. Serve the meat over the prepared crispy rice, garnishing with fresh cucumber, edamame, chopped chives, and toasted sesame seeds.
