Stir-fry with Shiitake Beef and Rice Noodles

INGREDIENTS

Stir-fry:

  • 200 g rice noodles
  • 6 spring onions (scallions)
  • 100 g shiitake mushrooms
  • 2 tsp grated ginger
  • 4 cloves garlic, finely chopped
  • Peanut oil

Marinade (+ Beef):

  • 250 g beef sirloin (ribeye or top round also work)
  • 1 tbsp peanut oil
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch

Sauce:

  • 5 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 3 tbsp mirin
  • 2 tbsp sesame oil
  • 1 tsp brown sugar
  • ¼ tsp salt
  • ½ tsp white pepper

PREPARING

  1. Prep the Meat: Slice the beef very thinly, against the grain. Mix it with peanut oil, cornstarch, and dark soy sauce, then marinate for at least 15 minutes.
  2. Prep Veggies & Sauce: Cook rice noodles per package directions. Thinly slice shiitake, grate ginger, and finely chop garlic. Cut spring onions into 5-cm (2-inch) pieces. In a small bowl, mix all sauce ingredients.
  3. Fry Beef: Heat 3 tablespoons peanut oil in a wok on high until smoking. Add beef and sear for 30 seconds without stirring. Then, stir-fry for 1-2 minutes until lightly browned. Transfer beef to a plate.
  4. Fry Mushrooms & Add Aromatics: Reheat 3 tablespoons peanut oil on high. Add shiitake and stir-fry for 1-2 minutes until golden. Next, add chopped garlic and ginger, sauté for 1 minute.
  5. Finalize Dish: Return beef to the wok. Add the prepared sauce and chopped spring onions. Stir-fry for 1 minute more. Finally, add cooked rice noodles and mix thoroughly. That’s it – serve or pack for your lunchbox!
