Stir-Fried Beef with Thai Basil

INGREDIENTS

  • 1 kg minced European beef
  • 10 cloves garlic (chopped)
  • 1 shallot (finely chopped)
  • 2 bird’s eye chilies (chopped)
  • 1 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 cup fresh Thai basil
  • Oil for frying
  • For serving: Cooked rice, eggs (one per serving)

PREPARING

  1. Heat 1 tablespoon of oil in a pan or wok over medium heat, add the chopped garlic, shallot, and chilies, and fry for 1 minute until the ingredients release a strong aroma.
  2. Add the minced beef to the pan and fry, breaking up large lumps of meat with a spatula, until it completely changes colour and browns well.
  3. Pour in the light and dark soy sauce, oyster sauce, fish sauce, and add the sugar.
  4. Mix all the ingredients thoroughly and fry for another 1–2 minutes, allowing the meat to fully absorb the deep flavour of the sauces.
  5. At the very end, toss in the fresh Thai basil leaves and stir-fry briefly, just until they wilt slightly from the heat.
  6. In a separate pan, fry the eggs in a bit of oil so that the edges are crispy and the yolk remains runny.
  7. Place portions of cooked rice on plates, top generously with the aromatic beef with basil, and crown each dish with a prepared fried egg.
