Roast beef on lettuce with apple and peanut sauce

INGREDIENTS

  • 400 g roast beef
  • 300 g salad mix
  • 200 g blue cheese
  • 30 g Dijon mustard
  • 300 g apples
  • 50 g peanut butter
  • 30 g walnuts
  • 50 g cherry tomatoes
  • 50 g fresh cucumber
  • 20 ml balsamic vinegar
  • 50 g honey
  • 1 lemon
  • 100 ml canola oil
  • 100 ml olive oil
  • 1 teaspoon dried paprika
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon turmeric
  • Salt and pepper

PREPARING

In a bowl, mix 50 ml of olive oil, dried paprika, oregano, thyme, turmeric and pepper. Transfer the beef into the bowl and thoroughly cover with the marinade. 

Wash and dry the lettuce. Cut the apple into wedges and sprinkle with lemon juice to prevent browning. Cut the cheese and cucumber into pieces. 

Prepare the sauce: blend peanut butter with vinegar, honey and lemon juice. Continue blending while slowly adding canola oil until a thick consistency is achieved. 

Remove the meat from the marinade and fry in a very hot pan on each side for a few minutes. After frying, season to taste with sea salt, drizzle with olive oil and cut into strips. 

Arrange the lettuce gently in the lunchbox, add tomatoes, cucumber, cheese and apple. Place the fried beef slices on top. Finally, drizzle everything with the prepared sauce.
