Rice bunnies with pork meatballs and vegetables

INGREDIENTS

  • 200 g sushi rice
  • 1 tablespoon rice vinegar
  • 150 g ground pork
  • 1 egg
  • 2 tablespoons breadcrumbs
  • 1 garlic clove, minced
  • 1 carrot, thinly sliced
  • 1 cucumber, thinly sliced
  • A handful of cherry tomatoes
  • 2 lettuce leaves
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • A few nori sheets (for decoration)
  • Salt to taste

PREPARING

  1. Cook the sushi rice according to the package instructions. After cooking, add a tablespoon of rice vinegar and soy sauce, and mix. Set aside to cool.
  2. In a bowl, mix the ground pork, egg, breadcrumbs, minced garlic, and salt. Form small meatballs from the mixture.
  3. Cook the meatballs in lightly salted water for about 10 minutes, until they are tender.
  4. Form the cooled rice into bunny shapes using a mold. Use nori to cut out ears, eyes, whiskers, and paws, and attach them to the rice figures.
  5. Cut the carrot into thin slices, then into small shapes (e.g., flowers).
  6. Slice the cucumber thinly.
  7. Arrange the rice bunnies in the center of a lunchbox on the lettuce leaves.
  8. Place the pork meatballs, carrot, cucumber, and cherry tomatoes around the bunnies, creating a colorful and attractive composition.
