Pork Korokke (Japanese Potato Croquettes) with Vegetables

INGREDIENTS

  • 300 g potatoes, peeled and diced
  • 200 g minced pork
  • 100 g grated cheddar cheese
  • 1 small onion, finely chopped
  • 1 egg
  • 1/2 cup flour
  • 1/2 cup breadcrumbs
  • Oil for frying
  • Salt and pepper to taste
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 cucumber
  • 1 apple
  • 2 lettuce leaves
  • Your favorite dipping sauce (e.g., tonkatsu sauce)

PREPARING

  1. Boil the potatoes in salted water until soft. Drain and mash into a puree.
  2. Sauté the onion in a pan, then add minced pork. Cook until the meat is browned. Season with salt and pepper.
  3. Shape the mashed potatoes into balls, then flatten them. Place the sautéed pork and grated cheese in the center, fold the edges, and reshape into flattened balls.
  4. Coat the croquettes by rolling them in flour, dipping them in beaten egg, and then coating them with breadcrumbs.
  5. Fry the croquettes in heated oil until golden and crispy. Drain on a paper towel.
  6. Cut the vegetables and the apple into pieces.
  7. Serve the croquettes in a lunchbox on lettuce leaves with fresh vegetables, apple and a dipping sauce.
