Beef steak with grilled vegetables and torched goat cheese

INGREDIENTS

  •     200 g beef tenderloin
  •     80 g asparagus
  •     50 g mushrooms
  •     80 g broccoli
  •     60 g cooked corn cob
  •     60 g goat cheese
  •     1 red onion
  •     40 g cucumber
  •     40 g cherry tomatoes
  •     1 green apple
  •     1 clove of garlic
  •     10 ml mayonnaise
  •     40 ml sunflower oil
  •     10 g French mustard
  •     10 ml soy sauce
  •     40 g toasted apple
  •     Smoked salt
  •     Red pepper
  •     Parsley
  •     Radish sprouts

PREPARING

Heat oil in a pan and add the beef. Season with pepper and salt. Fry on each side for a few minutes. Slice mushrooms and add to the pan. Remove the beef from the pan. Add chopped garlic and corn, fry for 2 minutes.

Boil water in a pot, add broccoli and asparagus. Cook for 3 minutes. After cooking, pour over cold water.

Prepare the sauce: mix oil, mustard, soy sauce, toasted apple, mayonnaise, a pinch of salt and pepper in a bowl.

Prepare the salad: cut the cucumber, apple, tomatoes, sprouts, parsley and transfer to a bowl.

Slice the beef. Cut the onion into smaller pieces. Slice the goat cheese and torch with a gas burner.

In the box, arrange 3 bowls. Transfer the salad, fried vegetables and goat cheese with onion into them.

Add asparagus and broccoli. Top with beef, drizzle with sauce and garnish with sprouts.
