Beef Steak Quesadilla with Sour Cream

INGREDIENTS

  • 400 g beef steak
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, sliced
  • 50 g canned corn
  • 1 zucchini
  • 1 tablespoon butter
  • 4 large tortillas
  • 2 cups mixed cheese (Gouda, Cheddar)
  • Sour cream

PREPARING

  1. Season the steak with olive oil, salt, and pepper.
  2. Sear on high heat for about 3 minutes on each side.
  3. Set the steak aside to rest for 10 minutes.
  4. While the steak is resting, sauté the garlic, corn, and diced zucchini. Add salt and pepper.
  5. Slice the steak into strips and mix with the vegetables.
  6. In a clean pan, melt the butter. Place a tortilla on the buttered pan, add cheese, the beef-vegetable mixture, more cheese, and top with another tortilla. Press down.
  7. Flip the quesadilla and cook until golden.
  8. Remove from the pan and cut into quarters or eighths. Repeat with the remaining tortillas.
  9. Serve with sour cream.
