Baked potatoes stuffed with ground pork in tomato sauce

INGREDIENTS

  • 4 large potatoes
  • 200 g ground pork
  • 1 can of diced tomatoes (400 g)
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 50 g grated mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

PREPARING

  1. Preheat the oven to 200°C.
  2. Wash and dry the potatoes thoroughly. Prick each potato with a fork in several places.
  3. Bake the potatoes in the oven for 35-40 minutes, until soft.
  4. Meanwhile, heat the olive oil in a pan. Add the finely chopped onion and garlic, and sauté over medium heat for 2-3 minutes until softened.
  5. Add the ground pork and cook for 5-7 minutes until browned.
  6. Add the canned diced tomatoes, oregano, basil, salt, and pepper. Simmer on low heat for about 10 minutes until the sauce thickens.
  7. Remove the baked potatoes from the oven and let them cool for a few minutes.
  8. Cut the potatoes in half and gently scoop out the inside, leaving about 1 cm of flesh around the skin.
  9. Add the scooped-out potato flesh to the pork mixture and mix well.
  10. Fill each potato half with the pork and tomato filling. Sprinkle with grated mozzarella.
  11. Return the potatoes to the oven for 10 minutes, until the cheese melts and is slightly golden.
  12. Transfer the baked potatoes to a lunchbox. Sprinkle with fresh parsley.
